Description

Cannelloni is a truly Italian dish made from special Italian pasta shaped like tubes. The finished cannelloni are also known as manicotti. Some chefs recommend boiling the cannelloni in a large amount of salted water for about five minutes first. However, this is not necessary; after baking, they turn out perfectly al dente. Enjoy your meal!

Ingredients

  • Conchiglie Pasta 10 oz
  • Morels 30 oz
  • Scallions 1 bunch
  • Vegetable Oil 2 tablespoons
  • Dill 1 bunch
  • Onion 1 piece
  • Garlic 1 clove
  • Suluguni Cheese 5 oz
  • Grated Pecorino Pepato Cheese 5 oz
  • Turmeric ¼ teaspoon
  • Cream 1 cup
  • Ground Black Pepper to taste
  • Salt to taste

Step-by-Step Guide

Step 1

To prepare cannelloni with mushrooms, chop the mushrooms, finely chop the onion and green onions, dill, and garlic, dice the suluguni (or feta) cheese, and grate the hard cheese.

Step 2

Whip the cream with the grated cheese, salt, pepper, and turmeric.

Step 3

Sauté the mushrooms in butter with the onion, garlic, dill, and green onions. Fill the cannelloni with the resulting filling.

Step 4

Place the stuffed tubes in a baking dish, pour the sauce over them, and sprinkle with diced suluguni (or feta) cheese and the remaining grated cheese. Bake for 20 minutes at around 390°F.

Step 5

You can garnish the finished dish with a sprig of cherry and oregano.
