Ingredients
- Beef chuck roast 10 oz
- Boneless pork shoulder 10 oz
- Lamb 10 oz
- Onion 1 piece
- Ground Breadcrumbs to taste
- Milk 1 cup
- Garlic 2 cloves
- Activated Baking Soda 1 teaspoon
- Coarse Salt to taste
- Ground Black Pepper to taste
- Canned Tomatoes (Pelati) 15 oz
- Conchiglie Pasta 18 pieces
- Grated Pecorino Pepato Cheese 0 oz
Step-by-Step Guide
Step 1
The most important thing is not the cooking method, but the filling. Store-bought filling is so bad that even my cat won't eat it, and he's quite the glutton. Buy 250 g of beef chuck and 250 g of pork shoulder. If you're a real aesthetic, buy 250 g of lamb; it won't make it worse.
Step 2
Chop the onion coarsely and sauté it in a pan until translucent, al dente, as the sausage vendors at gas stations say.
Step 3
Soak the white breadcrumbs in milk. How much you add to the filling is up to you; the more, the tastier and unhealthier. For example, a chef might say that the wet breadcrumbs should be 40% of the weight of the meat. In my opinion, 40% is a bit much.
Step 4
Pass the meat, soaked and squeezed breadcrumbs, sautéed onion, and garlic through a meat grinder, add a teaspoon of baking soda, salt, and pepper, and mix the filling thoroughly. I haven't added eggs to the filling for many years. In my opinion, they make the dish a vivid representative of English cuisine – hard to swallow.
Step 5
In a hot pan, add the filling, then add a 400 g can of diced Italian tomatoes, mix, and fry over high heat for 7-10 minutes, then reduce the heat to 'below medium', cover loosely, and cook until semi-done for another 10 minutes.
Step 6
In boiling salted water, add the cannelloni and cook them for 5 minutes until semi-done.
Step 7
Cool the filling and stuff the cannelloni with it.
Step 8
Prepare a quick main sauce. You can make a white sauce, like béchamel, but I prefer a red sauce based on tomato passata. Place the cannelloni in a baking dish and pour the sauce over them.
Step 9
Place in a preheated oven at 180°C (350°F) for 30-40 minutes.
Step 10
Once ready, sprinkle grated parmesan on top. Enjoy your meal!
