
Cannelloni with Goat Cheese

Ingredients
- Garlic 10 cloves
- Olive Oil 5 fl oz
- Baking Tomatoes 30 oz
- Spanish onions 1 head
- Parsley 5 oz
- Conchiglie Pasta 12 pieces
- Goat cheese 5 oz
- Grated Pecorino Pepato Cheese 0 oz
Step-by-Step Guide
Step 1
Preheat the oven to 375°F.
Step 2
In a deep skillet, heat olive oil and sauté eight crushed garlic cloves. Add blended tomatoes and cook for ten minutes until the sauce thickens.
Step 3
In another pan, sauté the thinly sliced onion and the remaining minced garlic until soft. Finely chop the parsley and add it to the onion and garlic. Simmer for about five minutes over low heat. Then remove from heat and mix with the goat cheese.
Step 4
Cook the cannelloni until al dente, drain the water, and rinse with cold water. Stuff each tube with a mixture of cheese, onion, and herbs. Place them in a baking dish, pour over the tomato and garlic sauce. Sprinkle with Parmesan and bake in a preheated oven for twenty minutes.
