- Orange zest 2 teaspoons
- Orange juice concentrate 3 tablespoons
- Ground Black Pepper 1 teaspoon
- Mint Leaves 24 pieces
- Feta cheese 5 oz
- Pitted olives 12 pieces
- Courgette ½ piece
Step-by-Step Guide
Step 1
In a bowl, mix the fennel, zest, orange juice, and black pepper. Add the diced feta, gently mix, and let it sit at room temperature for 1 hour, or refrigerate for 3 hours.
Step 2
On a wooden skewer, thread 1 mint leaf, then half an olive, followed by a piece of cucumber and a cube of feta. Repeat the same with the remaining ingredients.
