Ingredients

  • Sourdough Bread 10 pieces
  • Butter 1½ tablespoons
  • Grated Pecorino Pepato Cheese 5 oz
  • Mascarpone Cheese Unagrande 5 oz
  • Pitted olives 0 oz
  • Chives 0 oz
  • Orange Bell Peppers ½ piece
  • Paprika ¼ teaspoon
  • Sherry 2 teaspoons

Step-by-Step Guide

Step 1

Preheat the oven to 375°F.

Step 2

Using a cookie cutter, cut out 40 circles from the bread, spread softened butter on one side, and place them on a baking sheet. Bake in the oven for 8 minutes until golden brown. Remove from the oven and leave on the baking sheet.

Step 3

Preheat the grill.

Step 4

In a bowl, mix together mascarpone, chopped olives, chopped chives, finely chopped red bell pepper, paprika, and sherry. Place 1 teaspoon of the mixture on each toast and sprinkle with parmesan. Place under the grill for 1 minute until the parmesan is golden.
