Ingredients
- Vegetable Oil 1 tablespoon
- Minced garlic 1 teaspoon
- Butternut Squash 15 oz
- Grated Ginger Root 1 teaspoon
- Palm Sugar 1 tablespoon
- Coconut Milk ½ cup
- Fish Oil 1 tablespoon
- Lime Juice 1 tablespoon
- Chili jam ½ teaspoon
- Coconut flakes 4 tablespoons
- Chopped Green Onions 4 tablespoons
Step-by-Step Guide
Step 1
In a skillet, heat the vegetable oil. Add the garlic and ginger and sauté for about a minute until fragrant.
Step 2
Add the peeled and diced butternut squash, coconut milk, sugar, lime juice, fish sauce, and chili sauce. Cover and simmer until tender, about 30 minutes.
Step 3
Transfer the pieces of squash to a plate, and place the skillet with the sauce over medium heat, cooking for a few minutes until the sauce thickens slightly. Drizzle over the squash and serve, garnished with coconut flakes and cilantro.
