Butter and Anchovy Sauce
Ingredients
- Butter 5 oz
- Anchovies 6 pieces
- Lemon 1 piece
- Parsley 0 oz
Step-by-Step Guide
Step 1
Mix half of the butter — previously softened or at least warmed to room temperature — in a mortar with the anchovies. Once the mixture is smooth, add the remaining butter and mix well.
Step 2
Place the mixture in a small saucepan and heat slowly — but do not allow the butter to darken. Stir in the lemon juice and finely chopped parsley.
Step 3
Pour the sauce directly onto the dish you are serving it with, or place it on the table in a warmed sauceboat. This sauce is great with meat, fried fish such as halibut, or baked fish like turbot.
