Ingredients
- Tortillas 4 pieces
- Large eggs 4 pieces
- Salt to taste
- Ground Black Pepper to taste
- Olive Oil 1 teaspoon
- Canned Jalapeño Peppers 5 oz
- Fajitas sauce 2 cups
- Sour Cream 2½ tablespoons
- Cheshire Cheese 0 oz
Step-by-Step Guide
Step 1
Preheat the oven to 355°F. Wrap the tortillas in foil and heat for 5–7 minutes.
Step 2
In a small bowl, beat the eggs with salt and pepper.
Step 3
In a skillet, heat the olive oil. Add the finely chopped chili peppers and sauté for a minute. Then pour in the beaten eggs and cook, stirring gently, until set.
Step 4
Place the eggs on the warmed tortillas, sprinkle with grated cheese, and roll tightly.
Step 5
Serve with salsa and sour cream.
