Ingredients

  • Brussels Sprouts 10 oz
  • Coarse Salt to taste
  • Ground Black Pepper to taste
  • Butter 1 tablespoon
  • Olive Oil 1 tablespoon
  • Spanish onions 1 head
  • Balsamic Vinegar 2 tablespoons

Step-by-Step Guide

Step 1

Clean the Brussels sprouts by removing old leaves and boil them in salted boiling water until tender, about 4 minutes, without losing color. Drain and quickly transfer to ice water. Drain again. Cut each sprout in half.

Step 2

In a skillet, heat 0.5 tablespoons of butter and 0.5 tablespoons of olive oil over medium heat. Add the Brussels sprouts and sauté, stirring, for about 3 minutes until browned. Season with salt and pepper, then transfer to a bowl. Cover with foil and keep warm.

Step 3

In the same skillet, add the remaining butter and olive oil and heat over low heat. Add the sliced onion and sauté until translucent, about 3–4 minutes. Pour in the vinegar and stir. Cook for another 30 seconds until the onion caramelizes.

Step 4

Add the onion to the Brussels sprouts and mix. Serve immediately.
