Brussels Sprouts with Bacon and Onion
Ingredients
- Bacon 4 pieces
- Brussels Sprouts 40 oz
- Olive Oil 1 tablespoon
- Onion 1 head
- Thyme 4 sprigs
- Salt 1 teaspoon
- Ground Black Pepper to taste
- Thyme 0 oz
- Meyer Lemon Juice 2 teaspoons
Step-by-Step Guide
Step 1
Remove the outer leaves from the Brussels sprouts and cut them in half or into quarters depending on their size. Boil in salted water for 3–5 minutes until tender. Drain.
Step 2
Meanwhile, in a well-heated skillet over medium heat, fry the finely chopped bacon until golden, but not crispy, about 4–6 minutes. Transfer to a paper towel.
Step 3
Drain excess fat from the skillet (about 1 tablespoon) and add olive oil to the remaining fat. Sauté the finely chopped onion over medium heat until soft, without browning, for 3–4 minutes. Add the thyme sprigs, salt, and pepper, and stir.
Step 4
Then add the Brussels sprouts and sauté, stirring constantly, for 3 minutes.
Step 5
Remove from heat, discard the thyme sprigs, and add lemon juice and thyme leaves. Stir and serve.
