  • Gruyère cheese 5 oz
  • Milk 15 fl oz
  • Wheat Flour 2 tablespoons
  • Olive Oil 2 tablespoons
  • Butter 0 oz
  • Brussels Sprouts 5 lbs

Step-by-Step Guide

Step 1

Prepare the Brussels sprouts: remove the outer leaves and stems. Rinse in water with vinegar or lemon juice. Bring salted water to a boil, add a handful of sprouts, and cover: when the water starts boiling again, add another handful. Once all the sprouts are in the pot, remove the lid so the vegetables retain their natural green color. The total cooking time is 20-25 minutes.

Step 2

Meanwhile, melt the butter with the olive oil in a pan, stir in the flour, and cook for 2 minutes. Slowly pour in the milk, and cook, stirring, for another 8 minutes.

Step 3

Transfer the contents of the pot with the sprouts to a colander and rinse under cold water. Place the sprouts in a baking dish, pour over the sauce, and sprinkle with grated cheese. Bake for 10-15 minutes at 355°F until a golden crust forms. Serve immediately in the same dish.
