If you don't have time to blanch the tomatoes in a skillet, you can substitute them with sun-dried tomatoes. For making Italian bruschetta, it's best to use ciabatta, as its slices will absorb olive oil well after toasting.

  • Ground Black Pepper to taste

Toast the bread in a dry skillet or in the oven until golden brown. In the oven, this will take three to five minutes (depending on the thickness of the bread slice) at a temperature of 390°F.

Dice the tomatoes into cubes with sides about half a centimeter. Finely chop three cloves of garlic.

Heat a skillet, add a splash of olive oil, and toss in the tomatoes and garlic. Cook them for a minute or two, just to warm them up without losing the fresh tomato flavor. Then drizzle in some balsamic glaze, stir, and remove from heat.

Soak the toasted bread with the remaining olive oil, pouring a little over each slice. Top with warm tomatoes, season with salt to taste, sprinkle with freshly ground black pepper, and add finely chopped herbs—any that you have on hand. Serve as an appetizer, for example, with wine.
