Bruschetta with Roasted Peppers
Ingredients
- Ciabatta 4 pieces
- Red Bell Pepper 1 piece
- Yellow bell pepper 1 piece
- Olive Oil 4 tablespoons
- Balsamic Vinegar 1 tablespoon
- Lemon Juice 1 teaspoon
- Salt to taste
- Ground Black Pepper to taste
- Capers 2 teaspoons
- Parmesan Cheese to taste
Step-by-Step Guide
Step 1
Pierce the peppers in several places with a fork, brush with olive oil (1 tablespoon per pepper), and roast in the oven at 390°F (about 400 degrees Fahrenheit) for about an hour (until charred). Once the peppers are ready, transfer them to a separate dish and cover with plastic wrap until cooled. When the peppers have cooled, peel off the skin and slice them into strips. Drain and reserve the juice released by the peppers while cooling.
Step 2
Mix 2 tablespoons of the pepper juice with two tablespoons of olive oil, balsamic vinegar, lemon juice, salt, and pepper. Dress the peppers and mix everything thoroughly.
Step 3
Toast the slices of ciabatta in a skillet on both sides without oil.
Step 4
Top the bread with the pepper salad, garnish with capers and a slice of parmesan.
