
Bruschetta with Mushrooms and Brie Cheese

Description
Bruschetta can be served either cold or warm.
Ingredients
- Ciabatta 8 pieces
- Brie cheese 5 oz
- Pickled Chanterelles 3 pieces
- Herbs 1 bunch
- Enoki mushrooms 0 oz
- Ground Black Pepper a pinch
- Olive Oil 3 tablespoons
- Port Wine 1 tablespoon
Step-by-Step Guide
Step 1
Preheat the broiler in the oven. Line a baking sheet with parchment paper.
Step 2
Place pieces of your favorite bread (ciabatta can be used) on the baking sheet. On top of the bread, add thin slices of brie cheese.
Step 3
Put it in the oven under the broiler for 3 minutes or until the cheese melts and the bread is lightly browned.
Step 4
Meanwhile, finely chop the caps of the champignon mushrooms and coarsely chop the enoki mushrooms. Finely chop the herbs (I used thyme and oregano). In a bowl, mix the mushrooms and herbs, drizzling with 2 tablespoons of olive oil.
Step 5
In a preheated skillet over medium heat, sauté the mushrooms with the herbs for about 3 minutes. Optionally, add port wine at the end. Season with freshly ground black pepper.
Step 6
Remove the prepared bread from the oven. Top the warm cheese with the mushroom mixture. Optionally, drizzle with olive oil.
