Ingredients

  • Olive Oil 2 tablespoons
  • Leek 0 lbs
  • Coarse Salt to taste
  • Dried Chamomile 1 teaspoon
  • Ground Black Pepper to taste
  • Country Bread 4 pieces
  • Brie cheese 10 oz
  • Yellow Cherry Tomatoes 2 pieces

Step-by-Step Guide

Step 1

Trim the dark green leaves and roots from the leek. Cut the remaining parts in half lengthwise and slice thinly.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the leek and thyme, season with salt and pepper. Cook, stirring, until soft and golden, about 15–20 minutes.

Step 3

Meanwhile, preheat the grill in the oven.

Step 4

Place the large slices of bread on a baking sheet, top with pieces of brie and the cooked leek. Then add thin slices of tomato, drizzle with olive oil, and season with salt and pepper.

Step 5

Grill for 5–8 minutes, until the cheese begins to melt and the tomatoes are browned. Serve immediately.
