Description

Broccoli with Red Pepper and Soy Sauce

Ingredients

  • Broccoli 25 oz
  • Water ½ cup
  • Vegetable Oil 2 tablespoons
  • Red Bell Pepper 1 piece
  • Garlic 3 cloves
  • Red pepper flakes a pinch
  • Soy Sauce 2 tablespoons
  • Rice Vinegar 2 tablespoons
  • Sugar 1 teaspoon
  • Green Onion 0 oz
  • Salt to taste
  • Ground Black Pepper to taste
  • Ginger 0 oz

Step-by-Step Guide

Step 1

Break the broccoli into florets and cut into pieces about 2.5 cm, cut the stalk into 0.5 cm cubes. In a 30 cm diameter skillet, pour in the water, vinegar, soy sauce, and add the sugar, then add the broccoli. Cover with a lid and cook on high heat until the water starts to boil and the color of the broccoli brightens — about 2 minutes. Then remove the lid, add the sliced bell pepper, and continue cooking until the broccoli is tender and all the water has evaporated — about 5 minutes.

Step 2

Push the broccoli to the edges of the skillet and pour the oil into the center, add the minced garlic, pepper flakes, and grated ginger.

Step 3

Sauté for 10 seconds, then mix everything together. Remove from heat, season with salt and pepper, and then sprinkle with chopped green onion on top.
