  • Broccoli 10 oz
  • Crushed Tomatoes in Their Own Juice 5 oz
  • Onion 0 oz
  • Curry 0 oz
  • Coconut Milk 5 fl oz
  • Ginger 0 oz
  • Turmeric 0 oz
  • Soy Sauce 0 fl oz
  • Cashew 0 oz
  • Butter 0 oz
  • Mild Chili Spice to taste
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Finely chop the onion, ginger, and tomatoes in their own juice.

Step 2

In a deep skillet, sauté the onion and ginger in butter. Remove from heat when the onion turns golden brown.

Step 3

Add curry to the same skillet, then add tomatoes, coconut milk, turmeric, salt, and sugar, and stir well with a spoon. Return the skillet to the stove and simmer on low heat for 10 minutes.

Step 4

Carefully trim the tough outer fibers from the broccoli stalk, leaving the tender inner flesh.

Step 5

Bring a pot of water to a boil — use plenty of water to completely submerge the broccoli. Add salt. Place the broccoli in the boiling water for three minutes — if you cook it longer, it will turn yellow and lose its flavor. Then, immediately transfer the broccoli to a bowl of ice water.

Step 6

Pat the broccoli dry with a towel and sauté in a pan until golden.

Step 7

Arrange on a plate, drizzle with sauce, top with soy sauce, and garnish with chili and toasted cashews.
