Ingredients

  • Broccoli 1½ kg
  • Onion 5 oz
  • Garlic 4 cloves
  • Parmesan Cheese 5 oz
  • Butter 4 spoons
  • Whipped Cream ½ glasses
  • English Dry Mustard ½ spoons
  • Breadcrumbs 2½ glasses
  • Dijon Mustard 4 spoons
  • Salt to taste
  • White Pepper (whole) to taste

Step-by-Step Guide

Step 1

In a saucepan, melt the butter and sauté the chopped onion and garlic for about four minutes, until softened.

Step 2

Mix the mustard powder with half of the Dijon mustard, add the breadcrumbs, and transfer to a saucepan. Sauté, stirring, for another eight minutes until golden crumbs form. Season with salt and pepper.

Step 3

When the mixture has cooled, add 70 g of grated Parmesan cheese and mix well. The cheese-mustard coating is ready.

Step 4

Wash the broccoli, separate it into florets, and cook in generously salted boiling water for three minutes. Drain in a colander, rinse with cold water to stop the cooking process, and place on paper towels.

Step 5

Preheat the oven to 355°F. Grease a glass baking dish with butter. Dip the broccoli into a mixture of cream, Dijon mustard, and 20 grams of grated Parmesan cheese, then transfer it to the dish and sprinkle with a cheese-mustard crumb topping. Bake until golden brown, about 30 minutes.
