Description
Typically, galettes refer to savory crackers, but this word comes from the French language, where galettes mean pancakes. One popular variation is the Breton galette made with buckwheat flour. It is often served with fried eggs, bacon, and cheese. Buckwheat flour is tricky to work with due to the lack of gluten, but this is balanced by its unique flavor.
Ingredients
- Buckwheat Groats 5 oz
- Chicken Egg 11 pieces
- Salt 1 tablespoon
- Butter 5 oz
- Gruyère cheese 5 oz
- Ham 5 oz
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Prepare the necessary ingredients.
Step 2
In a mixing bowl, combine buckwheat flour, an egg, 500 ml of water, and salt until you achieve a smooth mixture. Pour enough water over the thick batter to completely cover it, and then place it in the refrigerator for one hour.

Take the dough out of the refrigerator and mix it; it should have the consistency of thick cream. If necessary, add more water. Let the dough sit at room temperature for 30 minutes.

Preheat a large skillet and grease it with butter.

Pour a little batter into the pan, tilting it in circular motions to cover the entire bottom surface with a thin layer.

Fry for 30 seconds, then crack an egg into the center of the pancake, you can spread the egg white a little over the pancake.

Sprinkle grated cheese around the egg yolk and add pieces of ham. Continue to cook on low heat until the egg is almost done.

Fold the edges of the pancake toward the center, leaving the yolk visible. Cook for another minute and brush the edges of the galette with melted butter. Repeat the process with the remaining batter and other ingredients.
