Bread Pudding with Leeks and Gruyère

Ingredients

  • Butter 3 tablespoons
  • Leek 4 pieces
  • Garlic 2 cloves
  • Dry White Wine 5 fl oz
  • Cream (40%) 25 fl oz
  • Milk 15 fl oz
  • Ground Nutmeg ½ teaspoon
  • Cayenne Pepper a pinch
  • Coarse Salt to taste
  • Ground Black Pepper to taste
  • Large eggs 5 pieces
  • Egg white 2 pieces
  • Brioche 20 oz
  • Grated Chocolate 5 oz
  • Grated Pecorino Pepato Cheese 5 oz

Step-by-Step Guide

Step 1

Trim the dark green leaves and roots from the leeks. Cut the remaining parts in half lengthwise, then thinly slice.

Step 2

Trim the crust from the bread. Cut the flesh into thin slices.

Step 3

Preheat the oven to 355°F.

Step 4

Grease a round baking dish with a diameter of 25 cm with butter.

Step 5

Melt the butter in a saucepan over medium heat. Add the leeks and minced garlic and cook until soft, about 10 minutes. Pour in the wine and bring to a boil. Let it reduce by half. Transfer half of the leeks to a bowl.

Step 6

In the bowl, lightly beat the eggs and yolks.

Step 7

To the saucepan with the remaining leeks, add the cream, milk, nutmeg, a little salt, and pepper. Heat until just below boiling. Carefully pour 75 ml of the mixture into the eggs while whisking. Then stir in the remaining cream mixture. Return the mixture to the heat and let it thicken for 4–5 minutes.

Step 8

In the prepared dish, layer 8–9 slices of bread. Spread 2 cups of the leek and egg mixture on top, then sprinkle with half of the remaining leeks and half of the cheese. Let it sit for 10 minutes. Then layer the remaining slices of bread on top, followed by the rest of the leek and egg mixture. Sprinkle with the remaining leeks and cheese. Let it sit for another 10 minutes.

Step 9

Cover the dish with foil and place it in a larger dish filled with hot water, so that it covers half of the pudding dish. Bake for about 55–60 minutes.

Step 10

Remove the foil and let it brown for another 20 minutes. Serve warm.
