Braised Chicory
Ingredients
- Chicory 12 pieces
- Butter 0 oz
- Safflower Oil 2 tablespoons
- Wheat Flour 1 tablespoon
- Chicken Broth 10 fl oz
- Beef Shank 1 piece
- Nutmeg to taste
- Salt to taste
Step-by-Step Guide
Step 1
Remove the stems from the chicory, rinse it, and place it in a pot, covering it with water and a pinch of salt. Bring to a boil. In another pot, bring an equal amount of salted water to a boil. Once the chicory boils, transfer it to another pot to avoid bitterness. Bring the water to a boil and cook for another 15 minutes.
Step 2
Melt the butter along with the sunflower oil, stir in the flour, and cook, stirring, for 2 minutes. Then slowly pour in the broth, add the shank, chicory, and a pinch of freshly grated nutmeg. Cook for 10-12 minutes. Then remove the shank and transfer the chicory with the sauce to a warmed dish.
