At a popular American restaurant, bowls are made with the essential avocado, healthful flax seeds, creamy cheese, and surprisingly delightful chanterelles. In fact, they fit perfectly into the dish’s concept: avocado provides healthy fats, seeds add carbohydrates, and mushrooms contribute pure protein, resulting in harmony, balance, and one of the few vegetarian dishes in a steakhouse.

Ingredients

  • Arugula 0 oz
  • Stracchino cheese 5 oz
  • Pickled Chanterelles 0 oz
  • Avocado ½ pieces
  • Flaxseeds 0 oz
  • Olive Oil 0 fl oz
  • Salt to taste
  • Ground Black Pepper to taste
  • Vegetable Oil 0 fl oz

Step-by-Step Guide

Step 1

Heat vegetable oil in a skillet, add the chanterelles, and sauté for 15–20 minutes until golden brown.

Step 2

Slice half of the avocado into thin wedges and arrange them in a fan shape on a serving dish. Place arugula leaves nearby (discard the tough stems), and season with salt and pepper. In the center of the bowl, add stracciatella and sautéed chanterelles. Sprinkle with flaxseeds and drizzle with olive oil.
