Ingredients
- Beef 10 oz
- Bacon 5 oz
- Onion ½ heads
- Carrot 1 piece
- Celery stalk 1 piece
- Potato 12 pieces
- Mild Chili Spice 2 pieces
- Parsley 0 oz
- Chicken Broth 5 oz
- Milk 10 fl oz
- Olive Oil 2 spoons
- Passata Tomato Sauce 2 spoons
- Fresh Bay Leaf 1 piece
- Apple Wine 5 fl oz
- Nutmeg 1 piece
- Salt to taste
- Ground Black Pepper to taste
- Clove 3 pieces
Step-by-Step Guide
Step 1
Pass the beef through a meat grinder and lightly salt it. Dice the bacon, onion, carrot, and celery into small cubes, add them to a deep skillet or pot, and sauté in olive oil along with a bay leaf and clove (preferably ground) for about ten minutes.
Step 2
Add the ground beef, stirring occasionally, and cook for another ten minutes, then pour the table wine into the skillet.
Step 3
Gradually pour in the broth and the tomato paste diluted in 100 ml of water, cover the pan with a lid, and reduce the heat to almost the minimum. Simmer the stew until the liquid has evaporated, about two hours.
Step 4
Almost right before it's done, pour 150–200 ml of milk into the Bolognese sauce (the remaining milk is for the mashed potatoes).
Step 5
Serve with mashed potatoes, sprinkled with grated nutmeg. Garnish each serving with half a chili pepper and parsley leaves.
