Bok Choy with Green Onions and Cashews

Ingredients

  • Olive Oil 2 tablespoons
  • Chopped Green Onions 1 cup
  • Garlic 3 cloves
  • Baby Bok Choy 20 oz
  • Black sesame seeds ½ teaspoon
  • Salt to taste
  • Roasted Peanuts ½ cup

Step-by-Step Guide

Step 1

In a deep skillet, heat the olive oil over medium heat. Add the chopped onions and minced garlic. Sauté lightly and add the bok choy cut into medium pieces. Drizzle with sesame oil and season with salt.

Step 2

Cover with a lid and cook for about 3 minutes (bok choy cooks in about the same time as spinach).

Step 3

Remove the lid, lower the heat, stir, and cook for another 1–2 minutes.

Step 4

Stir in the lightly crushed nuts and mix well.
