Boiled Beef Tongue
Ingredients
- Beef tongue 45 oz
- Bay leaf 3 pieces
- Allspice berries 10 pieces
- Ocean salt to taste
- Pasilla Pepper 1 tablespoon
- Lemongrass 0 oz
- Carrot 5 oz
- Celery salt 5 oz
- Onion 5 oz
- Lemon-Pepper Mix 1 teaspoon
Step-by-Step Guide
Step 1
Place the tongue in a pot.
Step 2
Cover with clean water.
Step 3
Bring to a boil and skim off the foam. Reduce heat to medium. Cook for 1 hour.
Step 4
Then add the bay leaves and allspice.
Step 5
Add the pink pepper and the pepper mix. Cook for 30 minutes.
Step 6
Chop the onion and carrot coarsely.
Step 7
Chop the celery coarsely, and separate the lemongrass into fibers.
Step 8
Add the vegetables and cook for another 1 hour and 15 minutes (total time — 2 hours and 45 minutes after boiling).
Step 9
Remove the vegetables and drain the water. Rinse under cold water for 2 minutes, then leave in the water for 10 minutes.
Step 10
Peel the tongue from the skin.
Step 11
Slice and arrange on a plate. Season with pepper and salt.
