Blueberry Ketchup
Ingredients
- Fresh Berries 6 cups
- Shallot 1 piece
- Sugar 1¼ cups
- Red Wine Vinegar ½ cup
- Grated Ginger Root 2 tablespoons
- Salt to taste
- Lime Juice 1 tablespoon
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
In a saucepan, combine the blueberries, finely chopped shallot, sugar, vinegar, ginger, lime juice, a bit of salt, and pepper. Place over medium heat and stir for 5 minutes.
Step 2
Bring to a boil, reduce to a low heat, and simmer for 20–30 minutes until thickened and the berries begin to burst.
Step 3
Cool for about 4 hours until the sauce thickens.
