Description

This sauce is not sweet, but rather spicy with a bit of tartness. A classic pairing is chicken with blackberry sauce. However, this sauce also complements white fish (especially catfish or river trout), veal, and game. Sometimes a third of the blackberries is replaced with unripe light grapes.

Ingredients

  • Blackberry 20 oz
  • Garlic 5 cloves
  • Red Long Chili Peppers 0 oz
  • Cilantro 1 bunch
  • Salt to taste

Step-by-Step Guide

Step 1

Carefully place the berries in a colander, rinse them, and allow the water to drain.

Step 2

Pass the berries through a fine sieve to remove the seeds.

Step 3

Prepare the spice mix. Peel the garlic and crush it in a mortar with red pepper and a generous pinch of salt.

Step 4

Add finely chopped cilantro leaves to the mortar for flavor.

Step 5

Mix the berry puree with the spices.
