Ingredients
- Tiger shrimp in brine 10 oz
- Green Tagliatelle Pasta 15 oz
- Marinated cherries 10 oz
- Arugula 0 oz
- Butter 0 oz
- Garlic 0 oz
- Dry White Wine 5 fl oz
- Salt to taste
- Spices to taste
- Fish Oil 15 oz
- Chili Oil to taste
- Olive Oil to taste
- Olive Oil to taste
Step-by-Step Guide
Step 1
Prepare fish broth from fish heads, celery, carrots, and onion. Cool down.
Step 2
For chili oil, cut the chili pepper in half, remove seeds, place in a bowl with olive oil, chopped onion, season with salt, and let sit for 20 minutes.
Step 3
For garlic oil, cut a few cloves of garlic in half, place in a bowl with olive oil, season with salt, and let sit for 20 minutes.
Step 4
For the sauce, heat chili oil, garlic oil, and extra virgin olive oil in a pan. Add halved cherry tomatoes, arugula, and peeled shrimp. Sauté.
Step 5
Pour in the wine and let it evaporate.
Step 6
Add the broth, season with salt, and add spices.
Step 7
In a pot of boiling salted water, cook the pasta until al dente (slightly undercooked).
Step 8
Add the pasta to the sauce. Sauté for 3-4 minutes.
Step 9
Garnish with arugula before serving.
