Ingredients

  • Lemon 1 piece
  • Chicken Broth 1½ liters
  • Goat cheese 25 oz
  • Butter 2 tablespoons
  • Parsley 0 oz
  • Ocean salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Clean the black goat's beard from the skin by placing the roots under running water, then rinse and cut at an angle into fairly thin and not too wide strips.

Step 2

Arrange the goat's beard slices in a skillet in a thin layer, pour in the broth, and add half a lemon, sliced into rounds no thicker than one centimeter. Cook over medium heat for about half an hour, checking for the tenderness of the root slices.

Step 3

Increase the heat under the skillet. Bring the remaining broth to a vigorous boil and evaporate it almost completely (if there is too much liquid in the skillet, you can simply pour some out).

Step 4

Once the broth is gone, add the butter to the goat's beard and stir to coat the slices with a buttery film on all sides. Season with salt and pepper, add finely chopped parsley or chervil, and stir again.

Step 5

Serve the goat's beard warm: as an appetizer, a side dish for roasted meat or poultry, or with salmon or white fish grilled in a skillet.
