Black Bean Appetizer with Poblano Pepper
Ingredients
- Olive Oil 2 tablespoons
- Shallot 2 pieces
- Ground ancho chili pepper 1 piece
- Canned Pork with Beans 30 oz
- Lime Juice 2 tablespoons
- Ground Cumin ½ teaspoon
- Cayenne Pepper a pinch
- Coarse Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Heat the olive oil in a skillet over medium heat.
Step 2
Peel and slice the shallots into thin half-rings. Remove the seeds from the chili and finely chop it. Add to the skillet and sauté until soft for 5 minutes, stirring. Transfer to a large bowl.
Step 3
Rinse and drain the beans. Add to the shallots along with the lime juice, cumin, and cayenne pepper. Season with salt and pepper. Mix and serve warm.
