Peppers and nectarines are used in roughly equal proportions. The dish would resemble a dessert if it weren't for the anchovies, which nicely temper the sweetness. Recipe from a popular American restaurant.

  • Sweet Pepper 4 pieces
  • Nectarines 3 pieces
  • Goat cheese 5 oz
  • Anchovies 4 pieces
  • Olive Oil to taste
  • Ground Black Pepper to taste
  • Salt to taste

Step-by-Step Guide

Step 1

Char the bell peppers on a grill over an open flame until they are completely blackened; this will take about 20 minutes over a good flame. Don't hesitate to burn the skin.

Step 2

Slice the nectarines in half. Remove the pit and place them on the grill for about 7 minutes. After 3.5 minutes of grilling, flip them over to the other side.

Step 3

Place the peppers in cold water or ice water: this will help them cool down faster and stop the cooking process more quickly.

Step 4

On a cutting board, carefully remove the remaining skin and seeds from the pepper without tearing the flesh. Cut it into large slices.

Step 5

Slice the nectarines into wedges.

Step 6

Finely chop the anchovy fillets.

Step 7

Arrange the appetizer on a plate: place the peppers first, followed by the nectarines, then the anchovies, and drizzle everything with olive oil on top. Season with salt, sprinkle with pepper, and finish with crumbled goat cheese.
