Beets with Orange Vinaigrette and Coriander
Ingredients
- Canned Baby Beets 20 oz
- Citrus Zest Mix 2 teaspoons
- Orange juice concentrate 1 tablespoon
- Champagne Vinegar 2 tablespoons
- Honey 1 teaspoon
- Olive Oil ¼ cup
- Coriander essential oil 1 teaspoon
- Coarse Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
In a dry skillet, toast the coriander seeds until fragrant. Cool and lightly crush in a mortar.
Step 2
Peel the beets and slice them thinly with a mandoline. Transfer to a bowl and cover with ice water. Refrigerate for 30 minutes.
Step 3
Meanwhile, in a bowl, mix the orange juice, vinegar, and honey. Add the olive oil while whisking. Then stir in the coriander and zest. Season with salt and pepper.
Step 4
Drain the beets and dry them. Toss them in the dressing and mix. Let sit for 5 minutes before serving.
