Ingredients

  • Beetroot 6 pieces
  • Water ¾ glasses
  • Garlic 2 cloves
  • Olive Oil 1 tablespoon
  • Ground coriander 1 tablespoon
  • Red Wine Vinegar 1½ spoons
  • Scallions 1 stalk
  • Walnuts 2 spoons

Step-by-Step Guide

Step 1

Thoroughly rinse the beets and place them in a microwave-safe dish. Add water and unpeeled garlic cloves. Cover with a lid and microwave for about 6-9 minutes, until the beets are tender.

Step 2

Place the beetroot and garlic on a cutting board and let them cool.

Step 3

Peel the beetroot, cut it in half, and then slice it into thin pieces.

Step 4

Peel the garlic and mash it into a paste. Transfer to a bowl and add the oil, vinegar, and finely chopped coriander. Slice only the white part of the green onions and add it to the garlic mixture. Season with salt and pepper.

Step 5

Add the beetroot, mix well, and plate the dish. Sprinkle with nuts on top.
