Beets pickled in apple cider vinegar
Ingredients
- Yellow Beets 5 pieces
- Apple Cider Vinegar 0 fl oz
- Sugar 1 tablespoon
- Olive Oil 1 tablespoon
- Dijon Mustard ½ teaspoon
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Boil the beets in boiling water until tender, about 30–40 minutes, or wrap them in foil and bake at 355°F for about 1 hour.
Step 2
If the beets were boiled, rinse them under cold water, or cool them down. Peel and slice into small pieces.
Step 3
For the vinaigrette, mix the vinegar, sugar, olive oil, mustard, salt, and pepper in a bowl. Whisk well with a fork and add the beets. Toss and let marinate at room temperature for 1 hour.
