For this recipe, it is best to use young beets. The roots should not be large.
Ingredients
- Yellow Beets 6 pieces
- Tarragon 0 oz
- Cardamom ½ teaspoon
- Ground clove a pinch
- Butter 0 oz
- Salt ¼ teaspoon
Step-by-Step Guide
Step 1
Preheat the oven to 430°F. Remove the stems and leaves from the roots, wash thoroughly, and scrub with a brush.
Step 2
Place the beets in a baking dish and cover tightly with foil. Bake for 1 to 1.5 hours until tender. Allow to cool. Carefully peel the skin off.
Step 3
In a saucepan, heat the cardamom and cloves until fragrant, add the butter and warm it up.
Step 4
Add salt and tarragon, place the roots in the pan, and sauté over medium heat for 5 minutes, allowing the beets to warm up and absorb the butter.
Step 5
Serve drizzled with the remaining sauce from the saucepan.
