Step 1

Wrap the beetroot in foil and bake in a preheated oven at 355°F for 1 to 1.5 hours. Let it cool, peel, and grate it on a coarse grater.

Step 2

Toast the cumin in a dry skillet until fragrant. In a bowl, mix the beetroot, cumin, and the remaining ingredients, adding salt and pepper to taste.
