Beetroot Sauce 'Tartar'
Ingredients
- Beetroot 4 pieces
- Olive Oil 3 tablespoons
- Coarse Salt to taste
- Ground Black Pepper to taste
- Balsamic Vinegar to taste
- Orange zest 2 pieces
- Endive 1 bunch
- Yogurt to taste
- Cilantro to taste

Preheat the oven to 200˚C (400˚F). Combine the beetroot, olive oil, salt, and pepper in a baking dish; cover it with foil and roast the vegetables until tender for 1 to 1.5 hours. Allow to cool slightly, peel, and chop coarsely. Transfer to a food processor; pulse until not quite pureed. Transfer to a bowl; add vinegar, half of the orange zest, salt, and pepper. Serve on endive leaves with yogurt, cilantro, and the remaining zest.
