Ingredients
- Olive Oil 1 tablespoon
- Shallot 1 piece
- Mustard Greens 5 oz
- Beetroot 1 piece
- Dried Rosemary 1 teaspoon
- Coarse Salt to taste
Step-by-Step Guide
Step 1
Pre-roast the beetroot (see note).
Step 2
In a large skillet, heat the olive oil over medium heat. Add the finely chopped shallot and sauté for 2–3 minutes. Then add 1 cup of thinly sliced beet greens and cook, stirring, until softened, about 3 minutes.
Step 3
Add the diced beetroot and rosemary. Season with salt and cook until the beetroot is heated through, 2–4 minutes.
