Ingredients

  • Cilantro 0 oz
  • Beetroot 4 pieces
  • Olive Oil 3 spoons
  • Coarse Salt to taste
  • Ground Black Pepper to taste
  • Orange zest 0 oz
  • Endive 1 head
  • Balsamic Vinegar 2 spoons
  • Natural Yogurt 5 oz

Step-by-Step Guide

Step 1

Preheat the oven to 390°F. Wash and scrub the beets, then place them on a baking sheet. Season with salt and pepper, and drizzle with olive oil. Cover with a sheet of foil and roast for one and a half hours. Afterward, let them cool, peel, chop coarsely, and blend into a coarse puree in a blender. Add vinegar, half of the orange zest, and season with salt and pepper.

Step 2

Separate the chicory into leaves and arrange the most beautiful ones on a plate. Place a tablespoon of beet paste on each leaf, drizzle with yogurt, and garnish with cilantro leaves and orange zest.
