Beet Greens with Croutons
Ingredients
- Salt to taste
- Champagne Vinegar 1 tablespoon
- White bread 0 oz
- Chicken Broth 10 oz
- Olive Oil 10 fl oz
- Mustard Greens 5 lbs
Step-by-Step Guide
Step 1
Wash the beet greens, chop them finely, place them in a pot, cover with water, and add a pinch of salt. Bring to a boil, then reduce the heat and simmer for 20 minutes. Drain the water.
Step 2
Heat the olive oil in a skillet, add the bread cut into cubes (remove the crusts beforehand), and fry them until golden brown, then remove from the skillet.
Step 3
Place the beet greens in a large skillet, pour in the broth, and cook, stirring, for 5 minutes. Stir in the croutons and vinegar – fry for a few more minutes and serve.
