Ingredients
- Beetroot 20 oz
- Sugar 3 tablespoons
- Butter 3 tablespoons
- Lemon ½ piece

Step 1
Wash the beetroot, boil it, peel off the skin, and pass it through a meat grinder.
Step 2
Add sugar, butter, lemon zest, and squeeze the lemon juice (or diluted citric acid) into the resulting puree.
Step 3
Mix everything and place in a pot over heat (for 5-10 minutes), stirring frequently to prevent sticking.
Step 4
After cooling, transfer the caviar to a serving bowl.
