Description

Ingredients
- Olive Oil 3 tablespoons
- Champagne Vinegar 1 tablespoon
- Shallot 1 head
- Honey 1½ teaspoons
- Ground Black Pepper to taste
- Radicchio Salad 1 bunch
- Herbs 0 oz
- Veal Tenderloin 20 oz
- Pear 1 piece
- Blue Cheese 0 oz
Step-by-Step Guide
Step 1
Mix 2 tablespoons of olive oil, vinegar, chopped shallot, and honey. Season with salt and pepper.
Step 2
Cut the meat into 2 steaks and generously rub with salt and pepper. Heat 1 tablespoon of oil in a skillet over medium heat and add the meat. Cook for 3 minutes on each side for medium doneness. Transfer to plates.
Step 3
In a bowl, combine the chopped radicchio, herbs, finely chopped pear, and crumbled blue cheese. Drizzle with the prepared dressing and gently mix. Place on top of the meat and serve.
