Step-by-Step Guide
Step 1
To the diced beef tenderloin, add shallot, cornichons, capers, green onion, chicken egg yolk, Worcestershire sauce, TABASCO, soy sauce, salt, ketchup, mustard, and mix everything together.
Step 2
On a round plate, arrange a circle of mini spinach and the prepared beef.
Step 3
Garnish with a French bouquet (arugula, frisée, thyme, green onion) and boiled quail egg.
Step 4
Sprinkle the finished dish with olive dust.
Step 5
Fry potato wedges (churros) in hot oil and also place them on the plate.
Step 6
Serve the tartare with cheese sauce (10 g cheddar, 10 g Gouda, 5 g Roquefort, 30 ml cream, pepper, garlic), adding truffle oil.
