Bean Sprout Sauce for Spelt and Buckwheat Gemelli Pasta
Ingredients
- Leek 2 pieces
- Olive Oil 2 tablespoons
- Sweet Pepper 10 oz
- Carrot 10 oz
- Passata Tomato Sauce 5 oz
- Gemelli pasta 15 oz
- Lentils 40 oz
- Feta cheese 5 oz
Step-by-Step Guide
Step 1
Heat the oil in a saucepan over medium heat. Add the leek, bell pepper, and carrot, and sauté for 5-7 minutes or until the leek is soft.
Step 2
Pour the sauce over the pasta and add one cup of water. Cover with a lid and reduce the heat. Simmer for 30 minutes or until the carrot is soft.
Step 3
Meanwhile, cook the pasta according to the package instructions.
Step 4
Stir in the bean sprouts into the sauce and cook for another 2-3 minutes or until the sprouts are heated through. Drizzle the sauce over the pasta and sprinkle with feta cheese, if using.
