Bean Pâté with Goat Cheese and Garlic

Ingredients
- Fava Beans 1⅕ cups
- Garlic 4 cloves
- Olive Oil to taste
- Meyer Lemon Juice 2 tablespoons
- Grated Lemon Zest 1 tablespoon
- Water ¼ cup
- Goat cheese 5 oz
- Coarse Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Bring a pot of salted water to a boil. Add the shelled beans and cook for 5 minutes, then immediately transfer to ice water. Drain and remove the outer skin. Transfer to a bowl.
Step 2
In a skillet over medium heat, heat 1 tablespoon of olive oil. Add finely chopped garlic and sauté until soft, making sure it doesn't brown.
Step 3
In a blender, combine the beans, garlic, lemon zest, lemon juice, and water. Blend until smooth.
Step 4
Then, while blending, add 2–3 tablespoons of olive oil.
Step 5
Transfer to a bowl and mix with the goat cheese. Season with salt and pepper to taste.
