Bean Pâté

Ingredients
- White Beans 1 cup
- Pickled Chanterelles 5 oz
- Onion 1 head
- Carrot 1 piece
- Vegetable Oil to taste
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Rinse the beans, cover with cold water in a 1:3 ratio, and leave overnight.
Step 2
In the morning, drain the water and rinse the beans under running water.
Step 3
Place in a pot, cover with cold water, and bring to a boil.
Step 4
Cook the beans for about 1 hour until soft.
Step 5
5–10 minutes before the cooking is done, add salt.
Step 6
Drain the water, leaving a little behind.
Step 7
Dice the onion into small cubes and grate the carrot finely.
Step 8
Slice the champignon mushrooms.
Step 9
Sauté the onion in vegetable oil until golden, then add the carrot and sauté together with the onion.
Step 10
Season with salt and pepper while sautéing.
Step 11
Sauté the mushrooms separately, seasoning with salt and pepper.
Step 12
Place the cooked beans, onion, and carrot in a blender and puree until smooth.
Step 13
Adjust the consistency of the puree with the reserved cooking water from the beans.
Step 14
Add the sautéed mushrooms, blend everything together while keeping some small pieces of mushrooms intact.
Step 15
Transfer the pâté to a convenient container with a lid.
