Basque omelette with sautéed peppers
Ingredients
- Chicken Egg 4 pieces
- Red Long Chili Peppers 5 oz
- Butter 0 oz
- Onion 2 heads
- Garlic 2 cloves
- Tomatoes 15 oz
- Fresh basil leaves ½ tablespoon
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Remove the skin and seeds from the tomatoes, and dice them. Use firm tomatoes.
Step 2
Sauté the peppers in vegetable oil, drain the oil (save 1 dessert spoon). Cut the peppers into strips.
Step 3
Melt the butter in a skillet, add the oil left from the peppers, add the onion, and sauté for 10 minutes without browning.
Step 4
Add the minced garlic and tomatoes, stir, add salt, pepper, basil, and cook for 20 minutes. Add the strips of pepper.
Step 5
Beat the eggs and pour them into the skillet. Stir until the mixture begins to thicken and the eggs are cooked. Remove the skillet from the heat and serve while stirring.
