  • Garlic 2 heads
  • Olive Oil 3 tablespoons
  • Citrus Zest Mix 5 pieces
  • Meyer Lemon Juice 1 tablespoon
  • Coarse Salt to taste
  • Chopped Sage Leaves 1 tablespoon
  • Ground Black Pepper to taste
  • Barbecue sauce 3 cups

Step-by-Step Guide

Step 1

Preheat the oven to 320 degrees Fahrenheit.

Step 2

Cut the tops off the heads of garlic to slightly expose the cloves. Drizzle the heads with olive oil, place the lemon zest on top, and sprinkle with thyme, salt, and pepper. Wrap each head in foil and place in the oven until soft, about 1.5 hours. Unwrap and cool for 10 minutes.

Step 3

In a blender, combine the squeezed pulp from the garlic cloves, lemon zest, thyme, and lemon juice. Blend until a paste forms.

Step 4

In a saucepan, mix the barbecue sauce with the garlic paste and heat over medium heat for 5 minutes. Cool.
