Ingredients

  • Semolina 5 oz
  • Milk 15 fl oz
  • Sugar ½ cup
  • Banana puree 5 oz
  • Grated Ginger Root ¼ teaspoon
  • Mango 1 piece
  • Shortbread Cookies 2 pieces

Step-by-Step Guide

Step 1

Cut the ripe mango lengthwise, remove the skin and pit. Slice the flesh into neat thin wedges.

Step 2

In a heavy-bottomed pan, combine ⅓ cup of sugar and 140 ml of water. Place over medium heat, add a pinch of ground ginger. Heat until the sugar is completely dissolved and the syrup thickens slightly. When the syrup begins to boil, add the mango slices, reduce the heat slightly, and simmer for about 10 minutes until soft but not mushy. Remove from heat.

Step 3

Meanwhile, in a saucepan, combine the milk and 2 tablespoons of sugar, stir, place over heat, and bring to a boil. Gradually sprinkle in the semolina while stirring continuously and cook over medium heat for about 5–6 minutes until it thickens significantly and all the liquid evaporates. Remove from heat, add the banana puree, stir until smooth, return to heat, and cook until thickened again. Remove from heat and let sit covered for a couple of minutes.

Step 4

Serve the porridge on warmed plates, crumbling one shortbread cookie over each serving and arranging the mango slices on top. If desired, drizzle with the remaining syrup.
