Description

Ingredients
- Oat flakes 5 oz
- Unsweetened shredded coconut 5 oz
- Bananas 3 pieces
- Baking Powder 2 teaspoons
- Vanilla salt 1 tablespoon
- Cinnamon 1 teaspoon
- Salt a pinch
- Marinated cherries 5 oz
- Olive Oil 4 tablespoons
- Coconut Milk 5 fl oz
- Muscovado Sugar 3 tablespoons
Step-by-Step Guide

Preheat the oven to 355°F.

Mix all the dry ingredients together.
Step 3
Mash the bananas with a fork or blender, then combine with olive oil and coconut milk.
Step 4
Add the dry ingredients to the wet ingredients and mix until smooth.
Step 5
Gently fold in the cherries (if frozen, drain the juice) using a spatula.
Step 6
Pour the batter into muffin cups, filling them two-thirds full, and bake for about 15–17 minutes until golden on top. Let cool before serving.
